Creamy Aioli with Roasted Garlic

  • 3 whole heads of garlic
  • 1 drizzle olive oil
  • 1 pinch sea salt
  • 1 cup mayonnaise
  • 1/2 cups freshly squeezed lemon juice
  • 2 tablespoons freshly grated parmesan
  • 1/2 tablespoon dijon mustard
  • 1 teaspoon worcestershire


  • Step 1

    Preheat oven to 425.

  • Step 2

    Cut the tops off the garlic heads. Place each garlic head onto a piece of aluminum foil and drizzle with olive oil and a pinch of salt. Wrap the foil around the garlic sealing it into a tight pouch. Place in the oven and bake for 40 minutes. Once baked, remove from the oven and let cool.

  • Step 3

    Once cool, squeeze out the roasted insides of the garlic into a food processor. Add in the remaining ingredients into the food processor and blend. Refrigerate for at least an hour allow the flavors to infuse before serving.
