Recipe Card

ingredients

  • 1 pound shrimp, peeled, deveined, tails removed
  • 8 ounces rice noodles
  • 16 ounces baby spinach, washed
  • 1 bell pepper, diced
  • 1/2 cup fresh cilantro leaves, chopped
  • 1/8 cup lime juice
  • 3/4 cup Annie's Organic Sesame Ginger Dressing
  • 1/2 tablespoon sesame seeds

Method

  • Step 1

    Bring large pot of salted water to boil. Add pasta and cook until al dente, about 7-8 minutes. Drain, rinse with cold water and set aside.

  • Step 2

    Preheat a grill pan over medium-high heat. Toss shrimp in 1/4 cup of Annie's Asian Sesame Dressing and grill on each side for 2-3 minutes. Shrimp should be pink and cooked through.

  • Step 3

    Add shrimp, rice noodles, bell pepper, cucumber, cilantro, lime, sesame seeds, & remaining dressing over bed of spinach. Toss to combine and serve!
