Southern Stewed Tomatoes and Okra

ingredients
- 4-6 slices of bacon, cut into lardons
- 1/2 white onion, diced
- 4-6 garlic cloves, minced
- 2 (14.5 ounce) cans Red Gold Petite Diced Tomatoes
- 1 (6 ounce) can Red Gold Sweet Basil or Roasted Garlic
- 1 dried bay leaf
- 1 tablespoon Worcestershire sauce
- 2 pounds frozen okra, sliced `
- 1 tablespoon red wine vinegar
- 1 1/2 teaspoons chicken bouillon
- 1 1/2 teaspoons cajun or creole seasoning
- 2 1/4 cup water
- Kosher salt and freshly ground black pepper, to taste
Method
Step 1
Using a Dutch oven or large pot, cook bacon over medium heat until crispy. Remove bacon and set aside.
Step 2
Saute onion in bacon grease until tender, then add garlic. Saute for 3-4 more minutes.
Step 3
Add canned tomatoes, Worcestershire Sauce, chicken bouillon, tomato paste, water, bay leaf, and Creole/Cajun Seasoning. Stir to combine.
Step 4
Bring to a simmer, turn to medium low heat, cover, and cook for 10-15 minutes. (Stirring occasionally)
Step 5
Add okra, stir, bring back to a simmer and cook uncovered until tender. (approx. 10 minutes)
Step 6
Remove bay leaf and add bacon and vinegar. Stir to combine.
Step 7
Remove from heat and season to taste.
