This is a one pot recipe that uses plenty of pantry staples so you can enjoy a cosy, delicious meal without wanting to pull your hair out. Our shortcuts here are using jarred pasta sauce and using bagged greens so you don't need to chop anything. Switch it up however you want to - if you’re vegan, use vegan sauce, if you’re gluten free, use gluten free bread, if you have Calabrian chili peppers or roasted garlic, toss a spoonful in. You got the power and with this recipe you’re gonna cook with less stress and less mess."

  • 1 tablespoon Olive oil
  • 1 tablespoon butter
  • 2 cans butter beans or cannellini beans
  • 1/4 teaspoon crushed red pepper, optional
  • Freshly ground black pepper, to taste
  • 1 24 oz jar vodka sauce, your brand of preference, or you can use this recipe
  • 2/3 cup water
  • 12 oz bag of chopped kale or spinach
  • 4 oz mozzarella cheese, cubed or shredded
  • Salt, to taste
  • Parmesan cheese, for sprinkling on top
  • 1 Baguette

Method

  • Step 1

    Drizzle the olive oil into a Dutch oven over medium heat. Add the beans to the skillet and cook them for about 5 minutes, tossing every so often until they are golden brown and a little crispy. Add the butter, red pepper flakes, and black pepper.

  • Step 2

    Add your jarred sauce to the beans. Pour the water and lemon juice into the pot and stir. Allow to simmer for about 20 minutes, stirring occasionally. Once those are incorporated, gently fold in the greens. Tuck in the cubed mozzarella (or shredded if that’s what you have!), cover, and cook on medium-low for another 10-15 minutes and remove from heat.

  • Step 3

    Top the pot of beans and greens with parmesan. Serve with a torn up baguette or whatever carb is calling your name and enjoy!
