ingredients

  • 1 1/2 cups almond flour
  • 1 cup rolled oats
  • 1 teaspoon baking soda
  • 1 tablespoon cinnamon
  • 1/4 teaspoon sea salt
  • 1 flax egg (1 tbsp. ground flax, 2 tbsp. water; mix & let sit for 5 mins), or 1 egg
  • 1/4 cup coconut oil, measured then melted
  • 1/3 cup plant based vanilla or plain yogurt
  • 1 cup coconut sugar
  • 1/2 cup chocolate chips or chunks (plus extra for topping, optional)
  • 2/3 cup chopped walnuts (plus extra for topping, optional)

Method

  • Step 1

    Preheat oven to 350.

  • Step 2

    In a medium bowl, mix together dry ingredients and set aside.

  • Step 3

    In a large bowl, mix together wet ingredients (except chocolate chips) then slowly add the dry ingredients and combine well.

  • Step 4

    Incorporate the chocolate chips and walnuts to the mixture.

  • Step 5

    Pour into an 8x8 brownie pan, greased or lined w/ parchment paper.

  • Step 6

    Bake for 25-30 mins or until edges are getting crispy but the middle is still moist.

  • Step 7

    Let sit for at least 30 minutes before enjoying.
