ingredients
- 1 1/2 cups almond flour
- 1 cup rolled oats
- 1 teaspoon baking soda
- 1 tablespoon cinnamon
- 1/4 teaspoon sea salt
- 1 flax egg (1 tbsp. ground flax, 2 tbsp. water; mix & let sit for 5 mins), or 1 egg
- 1/4 cup coconut oil, measured then melted
- 1/3 cup plant based vanilla or plain yogurt
- 1 cup coconut sugar
- 1/2 cup chocolate chips or chunks (plus extra for topping, optional)
- 2/3 cup chopped walnuts (plus extra for topping, optional)
Method
Step 1
Preheat oven to 350.
Step 2
In a medium bowl, mix together dry ingredients and set aside.
Step 3
In a large bowl, mix together wet ingredients (except chocolate chips) then slowly add the dry ingredients and combine well.
Step 4
Incorporate the chocolate chips and walnuts to the mixture.
Step 5
Pour into an 8x8 brownie pan, greased or lined w/ parchment paper.
Step 6
Bake for 25-30 mins or until edges are getting crispy but the middle is still moist.
Step 7
Let sit for at least 30 minutes before enjoying.
