We will be using a classic and beloved jam from the UK, Tiptree, that pairs perfectly with whisky. Tiptree has made quality preserves on its farm in Tiptree, Essex since 1885, and its ginger jam combines beautifully with whisky to create a unique twist to this classic cocktail. The UK has a centuries-old tradition of producing whisky, with a diverse range of flavors that reflect the unique environment and expertise of different distilleries. We’ve used Penderyn here, a single malt made in a small town in South Wales, which has beautiful notes of cream toffee, rich fruit, and raisins. You could also use a single malt Scotch, from one of Scotland’s five distinct whisky regions: for example, Kilchoman, which is made on the beautiful Islay island; or Wemyss, a blended whisky with a signature malt from the Highland Island region. Or you could use an Irish whiskey such as Bushmills, made in Northern Ireland in the world’s oldest licensed distillery.
Keeping in mind what’s in season, we’ll be using fresh plum juice but this can be substituted for most fruits that may be in season wherever you may be located! To start, we’ll grab our ingredients; Whisky, local honey, Ginger Tiptree Jam, homemade plum juice, and Fever-Tree ginger beer, a well-balanced mixer from the UK. Fun fact, making plum juice is extremely easy, just add a little water to a blender, add your plums and blend until smooth and strain!

- 2 ounces Penderyn Whisky
- 1/ 2 ounce honey
- 1/ 2 ounce Tiptree ginger jam
- 3/ 4 ounce plum juice, see note below
- Fever Tree ginger beer
- 1 plum, sliced, to garnish
- thyme, to garnish
In a cocktail shaker, add Penderyn whisky, honey, Tiptree jam, and plum juice.
Shake with ice for 30 seconds and double strain into glass with ice.
Top with Fever Tree ginger beer.
Garnish with fresh plum slices and thyme.
Note: To make plum juice, pit 3 plums, and cut them into bite-sized pieces. Add 1/2 cup water and blend until smooth. Strain the mixture and chill before using in cocktails.
