- 2 (approximately 6-8 ounces each) salmon filets
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Paprika, to taste
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 4 garlic cloves, minced
- 4 sprigs of fresh thyme
- Lemon zest and juice, for serving
- Freshly chopped parsley, for serving
Method
Step 1
Let the salmon come to room temperature. Pat the salmon dry, especially the skin, then score the salmon skin.
Step 2
Season both sides of the salmon generously with salt, pepper, and paprika, rubbing the seasonings into the slits.
Step 3
Heat a skillet over medium heat. Add olive oil (after the pan is hot).
Step 4
Place the salmon in the skillet, skin side down, and press down with a spatula. Cook for 2 minutes.
Step 5
Flip the salmon and cook for another 2 minutes.
Step 6
Flip the salmon again, reduce the heat to low, and add butter, garlic, and thyme. Baste the salmon with the butter mixture for 4 minutes.
Step 7
Zest lemon over the salmon, squeeze lemon juice, and sprinkle with parsley before serving.
