ingredients
- 18 ounces boiled Pumpkin
- 2 teaspoons Baking powder
- 1 cups Self raising flour
- 1 egg
- 2 tablespoons coconut oil
- 1/3 teaspoons salt
- 3 tablespoons brown sugar
Method
Step 1
Boil Pumpkin, strain it and then mash down to a pulp and allow to cool for 5 minutes.
Step 2
Whisk in egg, flour, baking powder, salt, sugar and combine.
Step 3
In a pan, allow the coconut oil to melt and come to a warm temperature, and then add in one tablespoon of pumpkin fritter batter. When both sides are browned you are ready to remove from the pan. Toss in cinnamon powder and sugar for extra flavour.
