ingredients
- 2 cups mini marshmallows
- 1 cup cane sugar
- 1 cup water
- 1 teaspoon vanilla bean paste (or pure vanilla extract)
Method
Step 1
Spread marshmallows on a parchment-lined baking sheet.
Step 2
Broil on high for 2–3 minutes, watching closely to avoid burning. Remove once golden and toasted.
Step 3
In a saucepan over medium heat, combine sugar and water. Stir until the sugar is fully dissolved, about 3–5 minutes.
Step 4
Stir in the toasted marshmallows and continue to stir until they melt completely into the syrup.
Step 5
Remove from heat. Stir in vanilla bean paste or vanilla extract.
Step 6
Strain the syrup through a fine mesh sieve to remove any remaining bits. Let cool completely.
Step 7
Transfer to an airtight container or glass jar.
Step 8
Store in the refrigerator for up to 2 weeks.
