Tomato season means pints of fresh multicolored tomatoes flying off the vines, the best way to preserve them is to bake a large batch in oil, garlic and herbs for a simple tomato sauce to serve with pasta or over fish, pork, poultry or rice. It's an easy night dinner that everyone will love!

ingredients

  • 2 1/4 pounds (1kg) cherry tomatoes, or grape tomatoes
  • 6 cloves garlic, peeled
  • 4 tablespoons olive oil
  • 3 teaspoons onion powder
  • 3 1/2 Rainbow Peppercorns
  • 2 teaspoons sea salt
  • 2 tablespoons fresh basil
  • 4 sprigs fresh thyme

Method

  • Step 1

    Preheat the oven to 345 degrees F.

  • Step 2

    Cut tomatoes in half and place in large bowl. Add olive oil, onion powder, rainbow peppercorn, sea salt and fresh basil to the tomatoes. Mix and combine thoroughly.

  • Step 3

    Place tomatoes into an oven safe dish. Top with garlic cloves and fresh thyme. Transfer dish to the oven and allow to roast for 20 - 35 minutes.

  • Step 4

    Serve with cooked pasta of choice or over rice, fish poultry or pork!
