ingredients

  • 1 cup cauliflower florets
  • 1 cup garbanzo beans, rinsed and drained
  • 2 teaspoons olive oil
  • 1/2 teaspoon Himalayan salt
  • 1/2 teaspoon black pepper
  • 1 bunch romaine lettuce, rinsed and chopped into 1” pieces
  • 1/2 cup sliced cherry tomatoes
  • 1 small English cucumber, thinly sliced
  • 1/2 cup sunflower sprouts
  • 1/4 cup hemp seeds
  • Annie's Organic Caesar Dressing

Method

  • Step 1

    Preheat the oven to 350 degrees F.

  • Step 2

    Place cauliflower and garbanzo beans on a baking tray and drizzle with olive oil, salt, and pepper. Bake for 20 minutes. Remove from oven and allow to cool for 5 minutes.

  • Step 3

    In a large bowl, add lettuce, tomatoes, and cucumbers. Add cauliflower and garbanzo beans.

  • Step 4

    Top salad with sunflower sprouts, hemp seeds and Annie's Organic Caesar Dressing.
