Method
For Ranch Pizza Dough
Step 1
A couple of hours before bedtime the night before you plan to make the pizza, start the pizza dough. I like to ferment my dough for a little bit longer in order to develop more depth of flavor.
Step 2
In a medium bowl, whisk 1 ¼ cups flour, yeast, sugar and salt.
Step 3
To the bowl, add 1 tablespoon olive oil, Annie's Cowgirl Ranch Dressing, and ¼ cup warm water. Combine with a wooden spoon. The mixture should look like a paste.
Step 4
Add remaining 1 ¼ cups flour to the bowl and mix. Slowly add remaining warm water a little at a time. The dough should start forming into a loose ball. I ended up using only ½ cup.
Step 5
Transfer dough to a clean surface. Knead dough for 5 minutes. If dough is too tacky, sprinkle with flour and continue to knead. Dough should look smooth and have a nice amount of stretch.
Step 6
Add dough to a clean bowl that has been coated with remaining 1 tablespoon olive oil, tossing to coat. Cover bowl tightly. Let dough sit on counter for two hours until dough has doubled in size. Refrigerate overnight.
Step 7
When you are 3-4 hours away from baking, remove dough from fridge. Scoop out dough and knead one to two times. Place back into greased bowl and recover with plastic wrap. Let sit on counter for 3-4 hours until doubled in size.
For Roasted Vegetables
Step 1
An hour or so before you want to start cooking the pizza, preheat oven to 400° F. Line a rimmed baking sheet with parchment paper and set aside.
Step 2
Toss peppers and onions with olive oil. Season with salt and pepper.
Step 3
Place veggies on parchment lined baking sheet and roast for 20 minutes. Once the veggies are done, place into a small bowl and set aside. Increase oven temperature to 425° F.
To Assemble the Pizza
Step 1
Grease a 12” pizza pan with olive oil.
Step 2
Dust a large surface with flour. Remove pizza dough from bowl. Using a rolling pin, roll out dough into a 12” circle. Fold dough onto the rolling pin, transfer to baking pan. Par bake dough for 8 minutes. Set aside.
Step 3
It’s time for toppings! Spread ¼ cup Annie's Cowgirl Ranch Dressing on pizza dough. Sprinkle with mozzarella, top with pepperoni and roasted vegetables. Sprinkle with dried basil, paprika, onion powder, garlic powder, chili powder, and black pepper. Bake for 12 minutes. Drizzle remaining Annie's Cowgirl Ranch Dressing on top of the pizza before slicing.
