Bazlama (Turkish Flatbread) with Eggs in Meat Sauce

This Turkish dish features a homemade flatbread called Bazlama, which is topped with tender beef, peppers, and beautiful cracked eggs.

ingredients
- 1 flatbread (bazlama), recipe below
- 3 eggs
- 1 cup beef, minced
- 1 onion, chopped
- 3 tomatoes, grated
- 3 green peppers, chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- a few whole peppercorns
- a handful of fresh basil
Method
Step 1
Cook a soft and fluffy flatbread.
Step 2
Heat the pan with olive oil. Add onion & salt and roast until turns golden brown.
Step 3
Respectively add green pepper, minced beef, tomato and ground black pepper. Roast this meat sauce at medium heat for 5 minutes.
Step 4
Crack the eggs over this sauce and cook at medium heat.
Step 5
Transfer the mixture (like an omelette) over your flatbread. Eggs should be yolks up.
Step 6
Top with pepper corns and fresh basil leaves. Serve like a pizza.
Bazlama (makes 3 flatbreads):

- 3 3/4 cups all-purpose flour
- 1 cup water, warm
- 1/2 cup milk, warm
- 1 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 teaspoon(4 grams) instant yeast,
Bazlama:
Step 1
Mix the flour and salt in a large bowl.
Step 2
Pour water and milk into the flour. And add the yeast and sugar in the middle of it.
Step 3
Combine everything and knead a soft dough. (Do not use extra flour, just wet your hand in the kneading process as needed)
Step 4
Cover the bowl with a stretch (plastic) wrap and put it in a warm place. Wait for about an hour to allow the dough to rise.
Step 5
After an hour, knead the dough for 1 - 2 minutes, and cover again. Wait for about an extra half hour.
Step 6
After this waiting process, cut the dough into 3 even pieces. Roll them in your hand and flatten them with your fingers on a kitchen cloth (I do not recommend a floured surface).
Step 7
Cover the flattened dough pieces with another cloth to avoid drying out.
Step 8
Heat a large non-stick or cast iron pan. Put the first flattened dough and cover the pan (to cook with steam too). At medium-high heat, cook each side for about 2 - 2.5 minutes. Repeat it for the other two pieces of dough.
