RECIPE:

Serves 4.
Ingredients:
4 organic Pork Chops thick cut.
4 tbsp of spanish paprika.
The zest of 1 lemon.
Pinch of Kosher salt and black coarse pepper.
2 tbsp of olive oil.
1 cup of freshly squeezed orange juice.
1 tsp of butter.

Preheat your oven at 350 F. First thing is to rub olive oil on both sides of your pork chops, then add plenty of paprika and rub it in both sides until they are completely covered, season your meat with kosher salt and black pepper, add the zest of 1 lemon on top of your pork .

Prepare a frying pan and heat it up ( no need to add extra oil) , once the pan is quite hot sear your pork chops on all sides ( this doesn't take too long and this is why you want your pan really hot) once they get a good color, place them with the help of kitchen tongs on a baking dish and finish cooking them in the oven for another 11 minutes or until ready, it depends on the thickness of your cut but keep and eye to avoid drying your meat, check by pinching them with a knife and once the juices run clear with no blood they are ready.
Add the Orange juice to the same frying pan you used before and make sure you integrate the remains at the bottom of the pan with your liquid, do this by stirring with a spatula or wooden spoon, simmer for a few minutes and let it reduce until becomes a brown thicker sauce, add the butter at the end for a more glossy sauce, strain your sauce to get a smooth mixture.
Take your pork chops out of the oven and place them on a serving plate, spoon the orange glaze on top and enjoy.
