Try this speedy dinner option: a deliciously simple one-tray airfryer aloo gobi that pairs perfectly with naan for dinner and can be served with grains for a convenient lunch the following day. Plus, it yields plenty of leftovers!

ingredients

  • 1 small cauliflower
  • small medium potato halved and pre boiled
  • 1 can chickpeas (optional but highly recommend)
  • 3 tablespoons olive oil
  • Seasoning 1 tsp of: salt, turmeric, chilli powder, garam masala, ground cumin powder, coriander powder.
  • 3 minced garlic cloves
  • 3 tablespoons passata
  • Garnish with fresh lemon and coriander

Method

  • Step 1

    Line your airfryer tray, add all prepared vegetables.

  • Step 2

    In a bowl add all your seasonings, garlic, oil and passata.

  • Step 3

    Airfry for 15-20 minutes mixing halfway. You may need to add some oil at this point if its dry.

  • Step 4

    Ensure its brown and crispy and serve with a squeeze of lemon and coriander.

  • Step 5

    Serve with naan, pickled onion and raita.

  • Step 6

    Once cooled, store in a clean storage container and this will keep for 2 days in the fridge or up to 3 months in the freezer.

  • Step 7

    Enjoy with rice, grains, tacos for the next day.
