"Vegan Meringue Jam Drops ?? I've been shoulda, woulda, coulda, gonna use the liquid from my chickpea tins, so I save it every time and end up throwing it away. But this time I said NO! Use it!!! ? So here's a perfect, healthy, refined sugar free, vegan and gluten free treat using your leftover chickpea liquid ? I used @natvianaturalsweetener stevia to replace the sugar, and since chickpea liquid normally gets thrown in the bin, that means these are virtually calorie free right ?? My mum and I road tested a few each, just to be sure ☺️# ? Vegan Meringue Jam Drops 1/2 cup aquafaba (tinned Chickpea liquid) 1/4 cup granulated stevia @natvianaturalsweetener 3/4 cup almond meal 1 Tbsp gluten free or all purpose flour 2 Tbsp Chia jam (or jam of choice) Blend the Natvia in a small blender until super fine Beat aquafaba in a bowl with electric mixer until soft peaks form (can be up to 15mins) Add the Natvia and mix for another 30 seconds Gently fold in the almond meal and flour Spoon Tbsp sized amounts on to baking trays lined with baking paper. Leaving 2-3cm gaps for expansion. Press thumb in the top of each and spoon in 1/4 tsp jam Bake at 120C for 1 hour Allow to cool on trays before consuming Chia Jam (Makes extra) 1 cup fresh of frozen thawed berries 2 Tbsp chia seeds 2 Tbsp granulated stevia @natvianaturalsweetener 1 Tbsp water Blend berries and water. Put into a jar or container and mix through chia seeds and Natvia. Allow to thicken for an hour. Use for meringues and store remainder in the fridge for a week to use as required"
