ingredients
- 4 ounces butter
- 1 1/3 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon sea salt
- pinch of ground nutmeg
- 3/4 cup muscovado sugar
- 1/4 cup granulated sugar
- 1 egg
- 2 teaspoons vanilla extract
- 3/4 cup dark chocolate, roughly chopped
- 3/4 cup milk chocolate, roughly chopped
Method
Step 1
Cook the butter in a saucepan on medium heat. Stir it often until it foams. The butter will later on brown. This will take about 3-4 minutes. The butter should have a golden brown like look to it. Remove it from the stove and let it cool.
Step 2
In a medium bowl, mix flour, baking powder, baking soda, salt and nutmeg.
Step 3
In a new bowl using an electric whisk or hand mixer, mix muscovado sugar, sugar, butter, egg and vanilla extract. The mix should be loose and sticky to the touch.
Step 4
Add the flour mixture and chocolate. Mix everything on medium speed until combined, about 30 seconds.
Step 5
Cut the dough in half and roll each half into plastic film. Chill the dough for at least 40 minutes before baking.
Step 6
Preheat the oven to 350Β°F while the cookies are chilling. Line a baking sheet with parchment paper.
Step 7
Once the dough has chilled, scoop about 2 tablespoons of dough into your hands and roll the dough into balls. Place up to 6 balls with a few inches apart. Bake the cookies for 10 minutes or until lightly golden brown.
Step 8
Carefully lift the parchment paper and drop it from the air about 3-4 times. This will flatten the cookies and create lovely chocolate pools that we love so much.
Step 9
Let the cookies cool for two minutes before digging in! Enjoy.
