- 2 packets Success Rice Boil-in-Bag Jasmine Rice
- 1 pound chicken breasts, cut into 1 inch cubes
- 1 tablespoon olive oil
- 1 pound andouille sausage, sliced
- 1 pound shrimp (peeled and deveined)
- 1 yellow bell pepper, diced
- 1 small yellow onion, diced
- 1 (12 ounce) package frozen okra
- 1 (14.5 ounce) can diced tomatoes
- 1 tablespoon gluten-free Cajun seasoning
- Kosher salt and pepper, to taste
- 1 bunch green onions, chopped
Method
Step 1
Cook Success Rice Boil-in-Bag Jasmine Rice according to package directions.
Step 2
Add chicken and sausage to a large pot with olive oil cooking on medium heat. When chicken is almost done add in shrimp.
Step 3
Once cooked fully add diced onions and peppers season with Cajun seasoning and saute for 5 minutes.
Step 4
Add diced tomatoes and okra. Adjust seasoning to taste.
Step 5
Remove from heat. Place rice in a bowl and top with jambalaya. Top with chopped green onions and add extra seasoning if needed
