ingredients

  • 2 cups flour
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 3/4 cup cold and cut into cubes butter
  • 2 eggs
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans
  • 1/2 cup dark chocolate

Method

  • Step 1

    Combine flour and sugar into a large bowl on a stand mixer with a paddle attachment, and begin adding the COLD butter a little a time to combine

  • Step 2

    Combine wet ingredients in a separate bowl, eggs, heavy cream, salt, baking powder, salt and mix well. Add the wet ingredients to the flour mixture and mix to combine

  • Step 3

    Place the chopped pecans and chocolate in a medium sized bowl and add 2 tbsp flour to the mixture before adding them to the dough, this ensures that they rise in the scone

  • Step 4

    Preheat oven to 400F/200C. Flour work surface, roll dough into an even circle and cut into 8 slices. Line baking sheet with parchment and brush each scone with egg wash(1 egg beaten with 1 tbsp water), that will create a golden crust

  • Step 5

    Bake 400F/200C for 20 minutes. No need to chill dough or cool scones, they are ready for baking and enjoying hot out of the oven or at room temperature, enjoy!
