Caramelised anything pretty much screams fall and autumnal cozy food, so stick some caramelised onions in this delicious toastie, serve with a side salad of butterhead lettuce with a lemon mustard dressing and you’ve got the perfect lunch!

This toastie recipe makes two sandwiches and if you don’t like goat cheese, you can totally swap it out for another cheese, too.

ingredients

  • 4 slices sourdough bread
  • 2 tablespoons butter, for spreading on bread
  • 2 tablespoons pesto
  • 3 onions, thinly sliced
  • 4 slices cheese
  • 4 slices prosciutto
  • 1 dash olive oil

Method

  • Step 1

    In a frying pan, add a splash of oil and your sliced onions on a medium to low heat. Stir into oil and caramelize (minimum 30mins for this golden color and stir regularly).

  • Step 2

    When the onions are ready… Heat your pan or grill and then butter the outside of your bread. Then flip over and spread pesto on all sides of inside of your bread.

  • Step 3

    Layer cheese, caramelized onions, prosciutto and close with top piece of bread.

  • Step 4

    Pop on the grill until gorgeous golden grill marks or bread is golden and cheese is melted. Serve with a lovely salad or eat on its own!
