"It’s a taco night over here. this dinner took 5 minutes- I had grass fed beef prepped (I cook mine in about 1/2 cup crushed tomatoes and any seasonings), plus LOTS of chopped spinach (Almost a full cup stuffed into each tortilla), bell pepper, sprouted corn tortillas, and habanero hot sauce. also some smashed avocado!"

For the Ground Beef

ingredients

  • 1 pound ground grass fed beef
  • 8 oz tomato sauce
  • 1 tablespoon Mexican seasoning blend
  • Sea salt and pepper, to taste

Other

ingredients

  • 4 sprouted corn tortillas
  • 3-4 cups chopped spinach
  • 1 avocado, mashed
  • 1 red bell pepper, sautéed
  • habanero hot sauce

Cook the Ground Beef

Method

  • Step 1

    Add the ground beef to a large skillet over medium heat. Begin to break up the meat and allow to slightly brown, then add the remaining ingredients. 

  • Step 2

    Simmer mixture until beef is cooked through, stirring occasionally and continue to break the meat into small pieces as needed.

Assemble

  • Step 1

    Toast the tortillas in a hot pan on the stove over medium heat, for 30 seconds on each side. Remove from the pan.

  • Step 2

    Stuff each tortilla with about 1 cup chopped spinach, the ground beef mixture, mashed avocado, red peppers, and a drizzle of hot sauce.
