Cinnamon Raisin Breakfast Muffins

1 cup paleo baking flour (could work with 1 cup plain almond flour
3 tbsp coconut flour
1.5 tbsp flax meal
2 tbsp grass fed butter or ghee, melted
3 eggs
2 tbsp pure maple syrup

1/4 cup almond milk or coconut milk (+ more if your batter seems dry)
1 tbsp cinnamon
1/2 tsp baking soda
Pinch of salt
1/4 cup raisins (check ingredient list for not added sweeteners)


1. Preheat oven to 350 and grease muffin tin.
2. Whisk eggs in a bowl
3. In a separate bowl, combine all dry ingredients
4. Add dry ingredients, butter, and maple syrup to eggs. Stir to combine
5. Fold in raisins
6. Fill 6 muffin tins and bake for 20-25 mins.
