Vegetarians, rejoice! @Gabe_Kennedy has a BLT that'll knock your socks off - but instead of bacon, it's tempeh! This sandwich is packed with flavor and a delicious variety of textures.

ingredients

  • 1 egg yolk
  • 1 tablespoon sherry vinegar
  • 1 cup avocado oil
  • to taste Kosher salt
  • freshly cracked black pepper, to taste
  • 4 slices tempeh bacon
  • 2 tablespoons softened butter
  • 2 pieces sourdough bread
  • small handful fresh lettuce

Method

  • Step 1

    Begin by making the mayo. Whisk egg and vinegar together till frothy. Slowly drizzle avocado oil, creating an emulsion. The first drizzle is the most important to building a stable emulsion. Season to taste with Kosher salt and black pepper.

  • Step 2

    Crisp up the tempeh bacon in a pan with a 1 tablespoon oil, about 10 minutes.

  • Step 3

    Heat a medium pan over medium heat. Spread butter on the bread slices and cook each side of the bread slices until golden.

  • Step 4

    Season the tomato 1 teaspoon salt and 1 teaspoon freshly cracked black pepper.

  • Step 5

    Assemble the sandwich by spreading a generous amount of mayo on both pieces of bread. Stack tomato, tempeh bacon, and lettuce. Enjoy!
