We were so excited to have kicked off our 2020 events line-up at FeedfeedBrooklyn by hosting a happy hour for our NYC-based friends in celebration of Bayonne Ham, a special ham specifically from Southwest France. Like many of its European counterparts, Bayonne Ham is a special treat that hails from a very specific region. In fact, it earned a Protected Geographical Indication (PGI) label status in 1998, which guarantees the quality and geographic origin of a product. To qualify for production, and receive the Bayonne seal, pigs must be born in Southwest France and fed only natural foods.  

What we love about Bayonne Ham as much as this special distinction is of course the taste!  While it is cured in PGI-labelled salt from Salies-de-Béarn, the meat itself is not overly salty, and has an incredible, melt-in-your mouth quality.  Incredible-tasting as a stand-alone, and even traditionally eaten as a snack food out of hand-held cones, the less salty nature of Bayonne Ham also makes it a delicious ingredient in an array of recipes.  It also pairs exceptionally well with various cheeses, as the milder salinity of Bayonne Ham mingles perfectly with the brininess of many cheeses.

The Feedfeed editorial team created a masterful menu for the evening including Whipped Ricotta Toasts with Bayonne Ham and Calabrian Chili Honey, Goat Cheese Stuffed Dates wrapped with Crispy Bayonne Ham, Bayonne Ham & Cheese Baguette Sandwiches, Pear, Blue Cheese and Bayonne Ham Flatbread with Honey and an Arugula Salad with Bayonne Ham, Golden Raisins and Toasted Almonds.  As mouth-watering as that all sounds, we can’t leave out the group favorite, Mac & Cheese with Crispy Bayonne Ham Breadcrumbs!  Incorporating Bayonne Ham into the perennial favorite was a true testament to the versatility of this ham.
