Green beans with almonds are a classic side dish perfect for the holidays or any time of the year. Shallots are sauteed in [vegan] butter until carmelized and then tossed with roasted almonds.

ingredients

  • 1 cup toasted almonds
  • 1/2 stick (1/2 cup) unsalted vegan butter, divided
  • 1/4 cup vegetable stock
  • 1 large shallot, peeled and sliced
  • Zest from 1 lemon
  • Kosher salt and freshly ground black pepper, to taste
  • 2 pounds green beans, cleaned and trimmed
  • 2 tablespoons tarragon, coarsely chopped, plus more leaves for garnish

Method

  • Step 1

    In a large sauté pan over medium-high heat, melt half the butter. Add shallots and cook, tossing, until lightly golden and soft, 3 to 4 minutes. Remove and set aside.

  • Step 2

    Reduce heat to medium, and add stock, along with the remaining butter, salt, and pepper.

  • Step 3

    Add green beans and toss to coat. Cover the pan and cook, tossing occasionally, until bright green and crisp-tender, for about 3 minutes.

  • Step 4

    Remove the cover, raise heat to high and cook until the water evaporates and the beans are glazed, for about 3 minutes more. Toss the green beans with tarragon, lemon zest, almonds, and sautéed shallots. Serve immediately.
