Potato Samosa

For the potato filling:

3 -4 large potatoes cooked and mashed (you can microwave them and scoop out the inside to save time) I used organic potatoes.
1 tsp cumin seeds
1/2 tsp red chili powder
1 tsp coriander powder
1/4 tsp garam masala
1 tsp dehydrated mango powder (Amchur)
1 tsp whole coriander seeds ground finely
Crushed pomegranate seeds (optional)
1/2 tsp fresh ginger shredded finely
Salt to taste
Small bunch of fresh coriander chopped finely
1-2 small green chillies
1/4 red onion chopped finely
2 tbsp oil or ghee

For the dough:
2 1/2 cups of plain flour
1 tsp salt
1 tsp carram seeds
4 tbsp ghee or 100g butter melted.
Water as required
Oil for frying (I used organic coconut oil as it's purer than most other cooking oils)
