ingredients
- 4 eggs, yolks only
- 3/4 cup tamari
- 1 tablespoon mirin
- 2 inch strip of kombu
- 2 shallots, thinly sliced
- chives
- flaky sea salt
- lemon zest
- 1 cup sushi rice, cooked
- olive oil
Method
Step 1
Add the yolks carefully to a container with the tamari, kombu and mirin. Cover and let sit in the fridge for 2 hrs, flip the yolks carefully, cover and cure 2 more hrs.
Step 2
Press the rice into a container and place in the freezer 30-45 min.
Step 3
Transfer yolks to a small oven safe dish and cover with oil. Cover with foil. Add into another oven safe dish with hot water in it.
Step 4
Bake at 170 for 12 min, turn oven off and let sit in there 15 min.
Step 5
Cut the rice into squares. Fry the rice in a cast iron until golden brown.
Step 6
Fry the shallots there until crispy.
Step 7
Top the rice with the yolk, lemon zest, chives, shallots and flaky salt.
