ingredients
- 3 shallots, cut in half, drizzled with olive oil and covered in foil
- 4 oz unsalted butter, at room temperature
- Parmigiano Reggiano, to taste
- 1 teaspoon dried oregano
- Tiny pinch of thyme
- 1 teaspoon season salt
- Freshly ground pepper, to taste
- Zest of 1 lemon
- Chives, to taste
- 8 slices of ciabatta
Method
Step 1
Bake shallots at 375 degrees F for 50-60 mins. Let rest until cool
Step 2
Once the shallots are cool, add to the butter along with the parmesan, lemon zest and seasonings.
Step 3
Smear on the bread. Sprinkle on more parmesan.
Step 4
bake at 375 for 15-20 min.
Step 5
Garnish with chopped chives and black pepper.
