You can’t go wrong with cake, chocolate & fruit! Basically 1 of your 5 a day 😜 if the temp is too high and the cake is burning, simply turn down the temperature- all ovens vary.

Recipe Card

ingredients

  • 1 1/2 cups plain flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 cup oil
  • 3/4 cup Greek yogurt
  • 2 eggs
  • 1 cup white chocolate chips
  • 3/4 cup raspberries

Method

  • Step 1

    Preheat the oven to 350F and line a baking tray (I used a bread loaf tin)- all ovens vary, this temp was ok for my oven but if it looks like yours is burning, simply turn the oven temp down.

  • Step 2

    In a bowl, combine flour, sugar & baking powder.

  • Step 3

    In a separate bowl, combine the oil, Greek yoghurt & eggs and mix.

  • Step 4

    Combine wet & dry ingredients.

  • Step 5

    Fold your raspberries (hold some back for topping cake) and chocolate and fold into the mixture.

  • Step 6

    Bake for about 50-55mins (ensure the top is covered with tinfoil for the first 45mins so the top doesn’t burn) then remove tinfoil for the remainder of time. Use the skewer/knife trick to see if the cake is done (the skewer/ knife should be clean when you pierce the cake).

  • Step 7

    Leave to cook, cut & serve - top with chocolate is optional.
