Eggplant Toast With Hummus

Ingredients:

1 large eggplant, sliced into 1 inch thick rounds

1 cup hummus

1 cup thinly sliced red cabbage

1/4 cup pine nuts

Himalayan sea salt and pepper, to taste 

lemon juice, to taste

olive oil, for drizzling (optional)

Directions

Preheat oven to 375˚F and add eggplant slices to a parchment lined baking sheet. Bake for 25-35 minutes, or until fork tender. 

Take eggplant out of the oven and layer with hummus,  red cabbage, pine nuts, Himalayan sea salt, black pepper, and a big squeeze of lemon (the lemon turns the cabbage a pink-ish color that is unexpected and so pretty!).

If olive oil is your thing, maybe drizzle a bit of it.
