Baked Sweet Potato Tots With Yogurt Dipping Sauce

Ingredients
2 large sweet potatoes, peeled (about 2 lbs total in weight)
2 tablespoons finely chopped parsley
1 1/2 teaspoons salt
1 teaspoon black pepper
For the dipping sauce
1/2 cup Chobani Whole Milk Plain Greek yogurt
2 tablespoons dijon mustard
1 tablespoon of honey
1 tablespoon chili sauce
1/4 teaspoon salt
Method
Cook the sweet potatoes in a pot of boiling water for 15 minutes. Drain and cool.
Shred the sweet potatoes into a bowl using a box grater. Mix in the parsley, salt, and pepper.
Line a large rimmed baking sheet with parchment paper and spray it with non-stick cooking spray. Place the tots on the parchment paper. Then spray the tops of the tots with non-stick cooking spray. Bake in a 425 degree oven for 40 minutes, carefully flipping the tots over once half way through cooking.
Meanwhile, combine yogurt, dijon mustard, honey, chili sauce, and salt in a small bowl.
Serve the baked sweet potato tots with the yogurt dipping sauce.
