Thickly sliced cauliflower "steaks" are coated in a homemade jerk sauce, then roasted in the oven until deliciously crisp. Topped with spicy roasted chickpeas and cooled down with a tangy avocado tahini spread adds a flavor-packed finish; this heart-healthy dish makes a great side to a main course—or stands by itself as a vegan entrée.

ingredients
Avocado tahini yogurt:
- 2 tablespoons vegan yogurt
- 1 1/2 tablespoons tahini
- 1 large ripe avocado
- Juice from half a lemon
ingredients
Jerk sauce and cauliflower:
- 1/3 cup coconut aminos (vegan soy sauce)
- Juice of 1 lime
- 1 tablespoon pimento seeds or allspice
- 1 teaspoon freshly ground black pepper
- 1 teaspoon rock salt
- 1 teaspoon nutmeg
- 2 teaspoons dried thyme
- 2 green onions, chopped
- 2 tablespoons fresh grated ginger
- 1 medium onion, chopped
- 4 garlic cloves,
- 2 scotch bonnet peppers
- 2 tablespoons brown sugar
- 1/4 cup vinegar
- 1 tablespoon olive oil
- 1 large head cauliflower, cut into 4, 1” thick slices
- 1 red onion, cut into wedges

Chickpeas:
- 1 teaspoon granulated garlic
- 1 teaspoon chili flakes
- Salt and freshly ground pepper, to taste
- 1 teaspoon smoked paprika
- 1 tablespoon olive oil
Method
To make the tahini yogurt:
Step 1
In a blender or food processor, combine yogurt, tahini, avocado, and lemon juice. Blend until smooth. Season with salt and pepper to taste. Set aside until ready to use.
To make the jerk cauliflower:
Step 1
Preheat oven to 350 degrees F. Line two baking trays with parchment.
Step 2
To make the jerk sauce, in a blender or food processor add coconut aminos, lime juice, pimento seeds, salt, pepper, nutmeg, dried thyme, green onions, ginger, onion, garlic, peppers, brown sugar, and vinegar. Blend until smooth. Place jerk sauce into a small bowl, add olive oil, mix to create the jerk paste.
Step 3
Lay cauliflower steaks, any loose cauliflower florets, and red onion evenly on baking tray. Brush jerk paste all over cauliflower and onions, making sure to coat evenly. Roast for 10 minutes.
To make the spicy roasted chickpeas:
Step 1
In a medium bowl, toss together chickpeas, granulated garlic, smoked paprika, chili flakes, and olive oil until evenly coated. Season with salt and pepper. Place on baking tray and bake for 10 minutes.
To serve:
Step 1
Spread tahini yogurt on a large plate. Lay roasted cauliflower and onions over top. Sprinkle with roasted chickpeas. Garnish with a drizzle of olive oil and chili flakes. Serve immediately.
