Happy Pancake Sunday friends! I finally coordinated my day to breakfast appropriately—feelin' so trendy.(Never mind that it was pure luck and that I made them for lunch not breakfast…details.) I have been impatiently waiting for the chance to try these AIP Banana Bread Pancakes since Mandy @be.sol.ful posted them last week, because grainfree + vegan + fluffy pancake is a rare find. But this recipe NAILED IT. And while I absolutely agree with Mandy they really don’t need syrup because they taste like straight-up banana bread, if I see a stack of pancakes I'm gonna douse it anyways. Oh and they’re nut-free too…basically made of banana, cinnamon, and Mandy’s aip recipe-creating magical touch.
