Bean Salad with Corn Tomatoes and Peppers

ingredients

  • 15 ounce can black beans
  • 15 ounce can black-eyed peas
  • 15 ounce can corn
  • 1 cup cilantro
  • 1 diced jalapeno
  • 1 diced bell pepper
  • 1 diced red onion
  • 1 juiced lime
  • 7 diced roma tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/3 cup white wine vinegar
  • 2 tablespoons olive oil

Method

  • Step 1

    Drain and rinse all canned corn and beans. Dice jalapeno, bell pepper, onion, tomatoes.Mix all ingredients together.

  • Step 2

    Season to taste. I like to add a little crushed red pepper to garnish.
