Tofu Katsu with Onion Sauce

ingredients

  • 1 cup water, or non-dairy milk alternative
  • 2 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 2 teaspoons sake
  • 2 teaspoons sesame oil
  • 1 tablespoon grated ginger
  • 2 cloves garlic, grated
  • 2 (14 ounce) blocks firm tofu, frozen and thawed
  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs
  • 1/2 cup chopped onion
  • 1/2 cup plus 2 tablespoons ketchup

Method

  • Step 1

    Preheat air fryer to 350°F. Whisk water and cornstarch in a bowl to create a slurry; set aside.

  • Step 2

    Mix together soy sauce, mirin, sake, sesame oil, ginger and garlic in a dish wide enough to fit all the tofu.

  • Step 3

    Gently squeeze out any excess water from the tofu. Cut into slabs or cubes and place into the dish with the soy sauce mixture. Lightly press down on the tofu so it soaks up some of the marinade. Flip and repeat so both sides have soaked up the marinade.

  • Step 4

    Toss tofu with flour, submerge in the cornstarch slurry, then coat in breadcrumbs.

  • Step 5

    Place into the air fryer, making sure none of the tofu slabs touch. Cook for 10-15 minutes, until browned and crispy. You will probably have to cook them in batches.

  • Step 6

    In the meantime, prepare onion sauce in a small bowl by mixing onions and ketchup.

  • Step 7

    Top katsu with onion sauce, or Japanese tonkatsu sauce if preferred, and serve immediately.
