Onigirazu is a highly customizable Japanese rice sandwich consisting of nori, rice, and fillings of choice. They’re particularly popular in Japanese convenience stores because everybody needs grab-and-go meals at times. If you’re a sushi lover, you’ll love this colorful and savory Spam teriyaki onigirazu!

ingredients
- 1 thick slice of spam
- 2 teaspoons Kikkoman® Teriyaki Marinade & Sauce
- 1/2 teaspoon sesame oil
- 3/4 cup shredded carrots
- 1/4 teaspoon kosher salt, divided
- 2 large eggs
- 1 large nori sheet
- 1 cup cooked short-grain white rice
- 3 romaine lettuce leaves (greens only)
- 1 small nori sheet
Method
Step 1
In a non-stick pan over medium heat, sear the spam slice on both sides until lightly browned.
Step 2
Add the teriyaki sauce to the spam, flipping on both sides, and cook until the sauce thickens and caramelizes. Remove spam and set aside.
Step 3
Wipe any dried sauce away from the pan and add sesame oil, shredded carrots, and ⅛ teaspoon salt.
Step 4
Sauté for 2 minutes or until the carrots lightly soften. Remove carrots and set aside.
Step 5
In a small bowl, beat the eggs together with the remaining salt.
Step 6
Add the eggs to the pan and cook, folding the egg omelet in half to form a similar shape as the spam slice. Remove the egg and set aside.
Step 7
Lay down the large nori sheet and add half of the rice in the center.
Step 8
Layer with lettuce, carrots, egg, spam, and the remaining rice on top.
Step 9
Place the small nori sheet in the center on top of the rice.
Step 10
Fold the four corners of the large nori sheet into the center tightly.
Step 11
Wrap the onigirazu tightly in saran wrap.
Step 12
Slice the onigirazu in half and enjoy immediately.
