- 1 (150 gram) package enoki mushrooms, roots cut off
- 16 slices thinly sliced beef
- 1/4 cup San-J No Soy Tamari
- 1/4 teaspoon dashi powder
- 1 teaspoon garlic powder
- 1 teaspoon freshly crackled black pepper
- 2 tablespoons honey
- 1/3 cup plus 2 tablespoons water
- 2 teaspoons vegetable oil
- 1/2 large onion, thinly sliced
- 2 large eggs, beaten
- 2 teaspoons sesame seeds (optional), for garnish
- 1 tablespoon chopped green onions (optional), for garnish
- Cooked rice, for serving
Method
Step 1
Wash the enoki mushrooms and gently squeeze out excess liquid. Separate into 16 even sections and set aside.
Step 2
Place one section of enoki mushrooms onto a slice of beef and roll it up tightly. Repeat to create 16 enoki beef rolls.
Step 3
In a medium bowl, whisk together San-J No Soy Tamari, dashi powder, garlic powder, black pepper, honey, and water.
Step 4
Heat a large pan over medium heat. Add vegetable oil and sauté the onions for about 3 minutes, or until lightly browned.
Step 5
Arrange the enoki beef rolls on top of the onions and pour the tamari mixture over the beef. Cover with a lid and cook for 5 minutes.
Step 6
Pour the beaten eggs over the beef rolls, re-cover the pan, and cook for another 3–5 minutes, or until the eggs and beef are fully cooked.
Step 7
Garnish with sesame seeds and green onions, if desired. Serve the enoki beef rolls over a bed of warm rice.
