Heat oil in a skillet over medium-low heat. Sauté onion for 2 minutes, then add mushrooms and tamari. Cook, stirring occasionally, for 5 minutes, until softened, then add in oat milk and cornstarch, stirring until thickened.
Spread mushrooms and sauce over toast.
