ingredients

  • 1/4 cup unsalted butter
  • 7 ounces semi-sweet chocolate, chopped
  • 1 egg, plus two eggs yolks
  • 3/4 cups all-purpose flour
  • 1/4 cup Dutch-processed cocoa
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 teaspoon instant espresso
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips, optional
  • 1/2 teaspoon salt

Method

  • Step 1

    Preheat your oven to 350 degrees F (180 degrees C). Line two baking sheets with parchment paper or silicone mat.

  • Step 2

    Melt the chocolate and butter in a large heatproof bowl, placed over a saucepan of simmering water or in a microwave in 30 second intervals. Set aside to cool slightly.

  • Step 3

    In a bowl of a stand mixer or a bowl using a hand mixer beat the sugars, egg, egg yolks and vanilla for 3-4 mins until light and fluffy.

  • Step 4

    Beat the chocolate mixture into the egg mixture. Finally, beat in the cocoa powder, flour, salt, instant coffee and baking powder until well combined. 5.Using a large cookie scoop, roll out as many cookie balls out of the dough as possible and place them on a cookie sheet 2-3 inches apart. Place a few mini chocolate chips on top of the cookie balls.

  • Step 5

    Bake for about 10-11 mins. Let the cookies cool on the baking sheet for 20-25 mins before removing.
