ingredients

  • 2 bagels, sliced in half lengthwise
  • 4 eggs
  • 4 slices prosciutto
  • Freshly ground pepper
  • Chopped chives
  • Softened butter

Method

  • Step 1

    Preheat the oven to 400F.

  • Step 2

    Line a baking sheet with parchment.

  • Step 3

    If your bagel holes are small, cut the holes a bit bigger ti give room for the egg to sit in.

  • Step 4

    Butter the cut sides of the bagels well and place them on the parchment, pressing to form a seal.

  • Step 5

    Crack the eggs in the holes and Sprinkle the bagels with grated cheese and season with pepper.

  • Step 6

    Place a slice of prosciutto on each of the bagels.

  • Step 7

    Bake for 10-12 minutes, depending on how you like your eggs cooked.
