ingredients
For the Pie Dough
- 1 cup cold butter cut into pieces
- 2 1/2 cups all purpose flour
- 1 teaspoon salt
- 5 tablespoons ice water, plus more if needed

For the Raspberry Filling
- 3 pints fresh raspberries
- 1 cup sugar
- 1/4 cup corn starch
- 1 lemon, juiced and zested
- 1 egg, lightly beaten with 1 tablespoon of water
- Coarse sugar, for topping
Method
Step 1
Combine flour and salt in food processor and pulse twice to mix. Add butter and pulse until it resembles crumbs. Add enough water so that when you pulse a few. If you find your mixture is too dry, you can add another tablespoon of water at a time.
Step 2
Turn the dough out onto a floured surface. Press the dough ball into two disk and flatten slightly. Wrap in plastic and refrigerate at least 30 minutes. Preheat the oven 350°F.
Step 3
While the dough chills, combine the raspberry filling ingredients in a bowl and allow to sit for 10 minutes.
Step 4
Roll out of the pies crusts out to 1/8-1/4 inch and fit into a pie plate. Crimp the edges with your fingers and set aside.
Step 5
Roll out the remaining dough and use a heart shaped cookie cutter for the top layer of the pie.
Step 6
Fill the prepared pie dish with the raspberry mixture and top with the heart cut outs. Brush the dough with egg wash and sprinkle with coarse sugar.
Step 7
Bake for 40 minutes until the filling has boiled and the crust is golden brown. Remove from oven and allow to cool completely before cutting.
