Recipe Card

For the Lobster Bisque

ingredients

  • 2 ounces butter
  • 1/2 bunch of green onion stalks
  • 1/2 cup white wine
  • 2 pounds fresh live lobster, cut in half
  • Kosher salt and pepper, to taste
  • 1 tablespoons olive oil

For the Mac and Cheese

ingredients

  • 2 pounds cooked lobster meat from bisque
  • 3 1/2 ounces butter
  • 4 garlic cloves, crushed
  • 2 ounces flour
  • 3 cups full fat milk
  • 2 ounces Parmesan, grated
  • 3 1/5 ounces white cheddar, grated
  • 10 1/2 ounces macaroni pasta
  • 1 tablespoon olive oil
  • Kosher salt and pepper, to taste

For the Lobster Bisque

Method

  • Step 1

    In a large pot on a low to medium heat, combine all ingredients. Cover and leave to simmer and steam until the lobster meat is cooked and the shell has turned pink, or 10 minutes . Make sure you do not clean your lobster as you want all of the flavor to go into your bisque.

  • Step 2

    Take the lobster out of the pot and set to the side. Through a mesh strainer, drain your bisque into a separate bowl and set to the side.

Mac n Cheese

  • Step 1

    Preheat oven to 400°F.

  • Step 2

    In a large pot with heavily salted water, cook your pasta following the pasta instructions on the back of the packet. When your pasta is cooked, drain it and reserve 1/4 cup pasta water for later.

  • Step 3

    Remove the meat from your lobster shell and roughly chop.

  • Step 4

    In a large skillet on a medium heat, melt the butter. Add the olive oil and crushed garlic and cook for 3 minutes making sure you stir occasionally so the garlic does not burn.

  • Step 5

    Add the flour to your pan and cook for several minutes stirring quite consistently with a whisk until a paste like texture forms, 2-3 minutes. Add in the milk one cup at a time, stirring until smooth. Once all the milk is added, leave to simmer until the sauce coats the back of the spoon, 3 minutes. More milk can be added to thin, if needed.

  • Step 6

    On a low heat, stir the drained pasta, half of the cheese and lobster through the sauce. Add a splash of pasta water. Spoon your mac and cheese into the baking dish and sprinkle the remainder of the cheese on top. Bake in the oven for 20 minutes.

  • Step 7

    Serve immediately with your lobster bisque on the side. Pour over the bisque into individual servings or drink as a soup on the side.
