"There is something so satisfying about sucking a prawn head. I know this may not sound too appealing to some people but as my mum says, it is where all of the flavour lives! This dish is bursting with flavour and has been made with my aglio e olio sauce that you can find in a lot of my recipes. Grab a few bread rolls when making this to mop up all of that delicious sauce."
Chili Garlic Prawns

Serves or Makes: 4 - 6
- 2 pound fresh prawns in their shell
- 6 large crushed garlic
- 1 chili, very thinly sliced
- 6 tablespoons olive oil
- 4 anchovy fillets
- 1/ 2 cup water
In a large frying pan, add the crushed garlic, sliced chilli, anchovy fillets, olive oil and a pinch of salt and stir through for 5 minutes on a low heat. Keep stirring as you do not want the garlic to burn.
Add the water to the pan and leave to simmer on a low heat for 20 minutes, stirring occasionally.
Take the sauce out of the pan and set to the side in a separate bowl.
In the same pan, add some of the oil that will be sitting at the top of your sauce to the pan to fry the prawns in. On a medium heat, fry your prawns on each side for several minutes until they turn red.
Take your prawns out of the pan and place on a dish. Pour the sauce over and serve with some fresh lemon and bread.
