Recipe Card

  • 1/4 cup creamy cashew butter
  • 1 tablespoon maple syrup
  • 1 tablespoon dairy-free milk
  • 1/4 tsp vanilla extract
  • 5 tablespoon oat flour
  • 1 pinch salt
  • 1 pinch cinnamon
  • 1 tablespoon mini chocolate chips
  • Step 1

    Mix the cashew butter, peanut butter, maple syrup, dairy-free milk, and vanilla extract together in a bowl.

  • Step 2

    Add in the oat flour, salt, cinnamon, and chopped chocolate chunks.

  • Step 3

    Put in the fridge while you make your waffle batter.

Waffles

  • 1 tablespoon ground flax seed
  • 3 tablespoon warm water
  • 2/3 cup oat flour
  • 1/3 cup almond flour
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dairy-free milk
  • 1 tsp apple cider vinegar
  • 3 tablespoon dairy-free sour cream or yogurt
  • 2 tablespoon maple syrup
  • 1/2 tsp vanilla extract

Waffles Instructions

  • Step 1

    Mix together your ground flax seed and warm water to create a flax egg and set aside.

  • Step 2

    In a large bowl, whisk together all dry ingredients (oat flour, almond flour, baking soda, baking powder, and salt).

  • Step 3

    In a medium sized bowl, whisk together all wet ingredients (dairy-free milk, apple cider vinegar, dairy-free sour cream or yogurt, maple syrup, and vanilla extract).

  • Step 4

    Add your combined wet ingredients into the large bowl of dry ingredients. Whisk to incorporate until there are no lumps left. Add in 1-3 more tablespoons of dairy-free milk if you want your batter a bit more runny.

  • Step 5

    Grease your waffle iron thoroughly and start to heat it up. While it’s heating up, take your cookie dough out of the freezer and roll it into small balls.

  • Step 6

    Once the waffle iron is fully heated up, scoop ⅓c of batter and pour it to make one waffle. Continue to fill as many waffle spots as you have on your waffle iron. Add in 3-5 cookie dough balls on top of the batter. Close and cook for about 3 minutes. Check to make sure it’s golden brown before taking it out. Repeat this step until you’ve made all your waffles.

  • Step 7

    Stack your waffles high and top with chocolate sauce and extra cookie dough balls.

  • 1 tablespoon unsweetened cacao powder
  • 1 splash vanilla extract

    Whisk together ingredients.

  • Step 2

    Drizzle over your waffles!
