Brussels Sprout Salad with Creamy Cilantro Dressing

This shaved brussels sprouts salad has radishes, crisp red onion, sweet corn and a delightfully tangy cilantro dressing.   • 2 cups shaved or sliced brussels sprouts
  • 1/2 cup shaved or sliced radishes
  • 1/2 cup shaved or sliced red onion
  • 1 tablespoon olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup steamed corn

Cilantro Dressing


  • 1 bunch cilantro
  • 5 1/3 container plain unsweetened dairy free yogurt
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 1/2 tsp agave nectar or maple syrup
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


  • Step 1

    Use a mandoline or a sharp knife to finely slice Brussels sprouts, radishes, and red onion about 2-3cm thick.

  • Step 2

    Leave sliced radishes and red onion to the side. Add Brussels sprout shavings to a large bowl and drizzle with 1Tbs of olive oil and a pinch of salt and pepper. Massage with your hands for 1 minute and let rest for another 5 minutes while you prepare the other ingredients.

  • Step 3

    Add all the cilantro dressing ingredients to a high speed blender and blend for a minute until everything is combined and dressing is creamy.

  • Step 4

    Steam fresh corn if needed, otherwise heat up frozen corn over the stove or in the microwave.

  • Step 5

    Add the radishes, red onion, corn, and cilantro dressing and mix together until everything is coated evenly.

  • Step 6

    Optional: top with anther sprinkle of salt, more cilantro, and red chili flakes. Enjoy!
