For some time now, I've been wanting to make the mock "tuna" salad, using chickpeas, and this was my perfect opportunity! I've also been inspired to make a kimchi mayo, so why not combine the two together? Using this creamy #eggfree spread was perfect for making my Kimchi #Tempeh "Tuna" Salad Bowl, with #farmfresh asparagus ribbons, cucumber, and watermelon radish matchsticks atop shredded red cabbage and cooked brown rice. I literally cannot stop eating this, do try it sometime!
