ingredients

  • 1 cauliflower steak
  • 1/2 cup quinoa
  • 1 cup vegetable stock
  • Olive oil
  • Kale
  • 1 garlic clove, minced
  • Peas
  • Edamame
  • Avocado
  • Fresh cilantro, basil, or herbs of choice
  • Chosen Foods 100% Pure Avocado Oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 4 tablespoons cornstarch
  • 1/4 teaspoon kosher salt
  • Fresh pepper, to taste
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cumin
  • Plant-based milk

Dressing

ingredients

  • 1/4 cup Chosen Foods Classic Vegan Mayo
  • Squeeze of fresh lemon juice
  • 1 clove minced garlic
  • 1/2 teaspoon maple syrup
  • Fresh pepper, to taste
  • 1 tablespoon tahini
  • Sprinkle of chopped cilantro

Method

  • Step 1

    Preheat your oven to 350°F. Cut your cauliflower. In a bowl, mix your flour, garlic, onion powders, turmeric, salt pepper, and cumin and whisk to combine.

  • Step 2

    In a separate bowl add a little plant-based milk. Dip your cauliflower in the milk then thoroughly sprinkle your flour mix on both sides.

  • Step 3

    In a hot pan. Add your avocado oil and lay your cauliflower in the pan. Sear until browned and crispy and then turn. Sear until golden brown on both sides then pop it onto a tray and put in to oven until it it fork tender.

  • Step 4

    Cook your quinoa according to package instructions subbing the water for vegetable stock. Then add to a bowl with a drizzle of olive oil and chopped fresh cilantro. Set aside.

  • Step 5

    For the kale. Sauté garlic and kale in a lil olive oil until wilted and the garlic fragrant:) then set aside.

  • Step 6

    For the dressing simply add all your ingredients into a small bowl and whisk until combined.

  • Step 7

    To assemble, add your kale, peas, edamame, quinoa, and beautiful cauliflower steak to a bowl and top with half an avocado and that yummy creamy dressing! Enjoy!
