2lb Spinach, Washed Goma ae sauce (recipe below) White Sesame Seeds, Toasted Boil water in a large pot. Add spinach and cook stirring frequently to ensure spinach is cooked all the way round, about 2 minutes. Drain into a colander and let cold water run to stop further colouring. Gently squeeze out excess water. Cut into 1 inch chunks. In a bowl put spinach and goma ae and stir gently to combine well. Sprinkle some sesame seeds on top. Serve. For the Goma Ae- 2 tbsp Tahini 2 tbsp Toasted White Sesame Seeds (grinded in a pestle&mortar or in a small food processor) 1 tbsp Soya Sauce 1 tsp Mirin 1-2 tbsp Water Mix First four ingredients together in a bowl, if too thick add a tablespoon of water at a time to get a creamy consistency. Serves 4
