A Note from Feedfeed

Homemade apple butter takes this babka to the next level. A traditional Jewish dessert, this version makes it the perfect treat for this fall season.

Recipe Card

Brioche dough

ingredients

  • 10 grams dry yeast
  • 70 grams sugar
  • 200 grams warm milk
  • 1 egg
  • 500 grams flour
  • 8 grams salt
  • 60 grams softened butter

Apple filling "apple butter"

ingredients

  • 4 grams apples
  • 150 grams brown sugar
  • 50 grams butter
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ground cloves
  • 50 grams bourbon
  • 1 teaspoon vanilla

Apple glaze

ingredients

  • 100 grams liquid drained from apple butter
  • 2 tablespoons maple syrup
  • 1 tablespoon powdered sugar
  • 30 grams butter

Method

  • Step 1

    Make the dough by mixing all the ingredients

  • Step 2

    Knead for 5 minutes until somewhat smooth

  • Step 3

    Place in a well-oiled bowl and let rise for 1-2 hours or until doubled in size

  • Step 4

    In the meantime make the filling

  • Step 5

    Add all the ingredients for the filling to a pot and stir

  • Step 6

    Bring to a simmer and cook for 5 minutes while stirring

  • Step 7

    Using an immersion blender blend just a little bit, so it has some chunks left

  • Step 8

    Pour the mixture into a sieve and drain most of the liquid, save it for the glaze

  • Step 9

    Remove from heat and let cool completely

  • Step 10

    Roll out the dough and cover with the apple mixture

  • Step 11

    Roll into a log

  • Step 12

    Cut the log in half lengthwise and twist around each other

  • Step 13

    Place in a loaf tin covered with parchment paper

  • Step 14

    Brush with melted butter

  • Step 15

    Bake at 200 under foil for 30 minutes, then remove the foil and bake for 10 more minutes

  • Step 16

    Cool completely before serving

  • Step 17

    In the meantime make the glaze by mixing all the ingredients and whisking on high for 3 - 5 minutes until thickened

  • Step 18

    Serve and enjoy
