- 1/2 cup yogurt of choice
- 1/2 teaspoon vanilla extract
- 1 cup dark chocolate chips
- Flaky salt to garnish, optional
Method
Step 1
Start by soaking the raspberries then drain & pat dry on a towel until the berries aren’t wet.
Step 2
Using a pastry bag, ziploc bag or with a small 1/8 tsp spoon fill each of the raspberries with peanut butter then place to them on a parchment lined cookie tray. Freeze for 5-10 minutes.
Step 3
Add some of the yogurt to a bowl along with the 1/2 tsp vanilla & mix. Coat the raspberries one by one with the yogurt then set back on tray. Freeze for an hour or until the yogurt is semi-set.
Step 4
Before you take the baking sheet out if the freezer melt the chocolate chips with 1 tsp of coconut oil. Let cool for a few min then dunk the raspberries with the melted chocolate until coated.
Step 5
If you have a leftover chocolate you can drizzle on top then sprinkle flaky sea salt on top.
Step 6
Freeze until the chocolate sets about 5-10 min then dig in! Store in the freezer in a tightly concealed container. Enjoy this frozen treat anytime.
